Elaboration
Elaboration
After being destemed and crushed, grapes are stored in stainless steel tanks, macerating the must with the skins during a moon cycle, 29 days. The must is transformed into wine thanks to the native yeasts presents on the grapes (25 ºC max).
Ageing
After pressing, aged on lees for 6 months, lees removed afterwards and 4 more months of tank ageing. Not aged in oak barels in order to discover the taste of grape tanins.
